Welcome to my blog. My name is Xi and I have been baking on and off for the past 8 years. I did a BSc(hons) degree in Biomedical Sciences in London and subsequently completed a PhD in Ophthalmology and Angiogenesis (how blood vessels grow) in March 2015. More recently, I have started a position as a postdoctoral research fellow at the University of Oxford investigating diabetes (the irony).

Even though I have been baking for quite a long time, I have only started to develop and polish my skills somewhat when I started the PhD back in 2011. Many people would say baking has a soothing and calming effect and I can’t agree more. As a PhD student, I worked 10-12 hours a day and 7 days a week in a lab and gets paid on average £1.50-2.00 per hour with no pension, no job security and no human rights all in the name of science. Understandably, one can get very depressed very quickly living like this. That was when I started baking!

The recipes in this blog are by no means perfect and I appreciate and welcome any comments and suggestions. On top of recipes, I also cover some basic sciences related to baking as well as reviews on bakeries/patisseries, plays and musicals on here too.

Finally, I hope you, the readers, will find just as much happiness and joy in baking as I do.
